Healthy Recipes: Whole Wheat Apple Cheddar Muffins

Preheat Oven to 375.
Make approx 12 large muffins, however I like to use the mini muffin tins (good for little hands!) makes about 36 muffins.

In a large bowl combine the following:

  • 2 1/4 Whole Wheat Flour
  • 1tbsp of ground flax seed (you can leave this out – just x-tra fibre & heart healthy)
  • 1 1/4 cup lightly packed brown sugar
  • 1tsp baking soda
  • 1/2 tsp of cinnamon
  • 1/2 tsp of nutmeg

In another bowl combine the following:

  • 1 egg
  • 1 cup plain yogurt (I like the liberte stuff)
  • 1/3 cup of vegetable oil (or sunflower oil)
  • 2 cups of diced & peeled apples (courtland or mcintosh are best)
  • 1 cup shredded old cheddar cheese divided (put approx 1/2 cup aside)

Instructions:

  1. Combine all wet ingredients, than add to dry ingredients and stir until moistened.
  2. Spoon batter into muffin cups (I don’t grease my muffin tins – I spray them with PAM – but you can grease).
  3. Top with 1/2 cup extra cheddar cheese on top of the muffins.

If they are the large muffins – bake for 20 mins.  If they are the small muffins, bake for approx 16 mins and check for them to be done with a fork, firm to touch.

Also, if whole wheat flour is too much for your family – you can split it 1 1/4 cup all purpose flour, 1 cup whole wheat instead.
